Healthy Ground Chicken Soup Recipe

Serves: 4

Total Time: ~50 minutes

Ingredients:

• 1.5 tbsp olive oil

• 1 lb ground chicken

• 1–2 tbsp flour (thickener)

• 2 garlic cloves, minced

• 1–2 carrots, diced

• 5–6 small potatoes, diced

• 1 small butternut squash

• 1/3 cup of peas

• 1/3 cup of diced red bell pepper

• 1/3 cup of corn

• 3 cups chicken broth (or water)

• Salt & black pepper, to taste

• Onion powder

• Garlic powder

• Paprika

• Dried basil

• Parsley (fresh or dried)

• Chili flakes (optional)

• 1/2 cup heavy cream

Instructions:

1. First, preheat the oven to 400F.

2. Meanwhile, dice the potatoes and carrots.

3. Next, cut the butternut squash in half, remove the seeds, and place it on a baking sheet lined with parchment paper.

4. Additionally, drizzle a little olive oil, salt, and pepper on top. Then cook the squash for about 25–30 minutes, or until soft.

5. Meanwhile, heat the olive oil in a large pot over medium heat.

6. Next, add the ground chicken and cook until browned. After that, sprinkle the flour over the chicken and stir so everything is coated.

7. Then crush the garlic and add it to the pot. Sauté for 2 minutes.

8. Afterwards, add the diced potatoes and carrots. Let them simmer for a few minutes, then pour in the chicken broth or water.

9. Bring the soup to a boil. After it boils, reduce the heat and let it simmer for about 20 minutes, or until the potatoes and carrots are tender.

10. Once the vegetables are soft, stir in the heavy cream and seasonings. Continue simmering for 10 more minutes.

11. Then, after the butternut squash is done and slightly cooled, peel off the skin and cut the squash into cubes. Finally, add it to the soup along with fresh parsley.

12. Serve warm with extra parsley and chili flakes.

For even more creaminess and flavor, add a small piece of butter on top before serving.
