One-Pan Creamy Garlicky Carrot Pasta
Ingredients:
(for 2–3 servings)
- 1 batch Garlicky Carrot Ribbons
- Pasta (any type – spaghetti recommended)
- 3 cups vegetable stock
- 1 teaspoon turmeric
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Parsley (fresh or dried)
- Salt & black pepper, to taste
Optional: Parmesan cheese, walnuts, or protein of choice
Instructions:
- Prepare the Garlicky Carrot Ribbons (as per recipe).
- Meanwhile, bring the vegetable stock to a boil in a pot.
- Add salt and pasta, and cook until al dente.
- Before draining, scoop out about 1 cup of the pasta stock and set aside.
- In the same pan as your carrots, add the cooked pasta.
- Slowly pour in the reserved pasta stock – a little at a time – stirring until a creamy sauce forms and coats the pasta.
- Add parsley, garlic powder, onion powder, turmeric, salt, and pepper and let it cook for five more mins.
- Optional: Top with toasted walnuts and Parmesan cheese, or your favorite protein. I also love to add some chili flakes!
