Ingredients

Potato Crust
  • 5 medium potatoes, peeled
  • 2–3 tbsp softened butter
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 egg, lightly beaten (optional, helps bind)
Filling
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 package fresh spinach
  • 3 large mushrooms, sliced
  • 1 package ground chicken or turkey
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 cup shredded cheese (cheddar, mozzarella, or Gruyère)
  • 1 egg
  • ¼ cup mayo
  • Fresh parsley, chopped

Instructions

1. Make the Potato Crust
  • Preheat oven to 400°F (205°C).
  • Boil potatoes until soft, then mash until smooth.
  • Add softened butter, egg (if using), salt, and pepper.
  • Press firmly into the bottom and up the sides of a pie dish to form an even crust.
  • Bake 20–25 minutes, until the edges begin to lightly brown and the crust looks set.
2. Make the Filling
  • Heat olive oil in a pan and sauté onion until soft.
  • Add garlic and cook for about 1 minute.
  • Add mushrooms and spinach; cook until the moisture reduces.
  • Add ground chicken or turkey and cook fully, seasoning with salt and pepper.
  • Remove from heat and spoon filling into the baked potato crust.
3. Add the Topping & Bake
  • Mix shredded cheese with mayo and egg, blend until creamy.
  • Spread this mixture over the top of the pie.
  • Reduce oven temperature to 375°F (190°C).
  • Bake 30–35 minutes, until the center is set and the top is golden and bubbly.

Let cool for 10 minutes before slicing.
