I actually created this on one of those evenings when I didn’t feel like running to the store but still wanted something wholesome and satisfying. The result? A silky, garlicky pasta tossed with caramelized carrot ribbons, a hint of spice, and creamy texture that feels like comfort in a bowl.

One-Pan Creamy Garlicky Carrot Pasta

Ingredients:

(for 2–3 servings)

  • 1 batch Garlicky Carrot Ribbons
  • Pasta (any type –  spaghetti recommended)
  • 3 cups vegetable stock
  • 1 teaspoon turmeric
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Parsley (fresh or dried)
  • Salt & black pepper, to taste

Optional: Parmesan cheese, walnuts, or protein of choice

Instructions:

  1. Prepare the Garlicky Carrot Ribbons (as per recipe).
  2. Meanwhile, bring the vegetable stock to a boil in a pot.
  3. Add salt and pasta, and cook until al dente.
  4. Before draining, scoop out about 1 cup of the pasta stock and set aside.
  5. In the same pan as your carrots, add the cooked pasta.
  6. Slowly pour in the reserved pasta stock – a little at a time – stirring until a creamy sauce forms and coats the pasta.
  7. Add parsley, garlic powder, onion powder, turmeric, salt, and pepper and let it cook for five more mins.
  8. Optional: Top with toasted walnuts and Parmesan cheese, or your favorite protein. I also love to add some chili flakes!
