Cinnamon Vanilla Banana Pancakes
Ingredients (Serves 2)
- 2 ripe bananas
- ½ cup Greek yogurt
- ¼ cup milk (any kind works!)
- 2 eggs
- 1 tsp vanilla extract
- 1–2 tsp cinnamon
- ¼ cup vanilla protein powder
- 2 tsp baking powder
- ½ cup oats
- ½ cup flour (regular or whole wheat)
- Coconut oil or butter for the pan
Topping Ideas:

Instructions
- In a large bowl, mash the bananas until smooth.
- Add Greek yogurt, milk, eggs, vanilla extract, cinnamon, and protein powder. Mix well.
- Stir in the flour, oats, and baking powder until just combined — don’t overmix!
- Heat a pan over medium heat and add a little coconut oil or butter.
- Pour in the batter (small or medium pancakes work best). Cook until small bubbles form on top, about 2–3 minutes, then flip and cook for another 2 minutes.
